Rhubarb Pie From Lottie

I’m assuming this is my Great Aunt Lottie.  I love those names from the turn of the century.  The last century.

Rhubarb Pie From Lottie

  • 2 cups frozen rhubarb
  • put in deep pie crust
  • mix 2 eggs (beaten)
  • 1/4 tsp salt; 1 tsp vanilla
  • 1 1/2 scant cup sugar
  • 2 level tablespoon flour
  • 1 level tablespoon corn starch

Beat all together & pour over rhubarb

Bake 15 min @ 400

Then @ 350 till done.

I love the limited instructions in these recipes.   This is cooking for not dummies.  You need to have some kitchen skillz to make these out.
